Beef Roast

I know I am adding all these carnivorous recipes! I apologize. I will add vegetarian fare soon! I am learning how to post these on this site and automatically publish to my Yankee New Mexican page on Facebook. They are not cooperating. Please be patient with me!

This is a very quick recipe for a delicious beef pot roast. Yes, you are now in beef country! You love Watusi and Long Horn Cattle, don’t question the horns. They are massive and you will not touch them. They are quite beautiful and intelligent animals but watch those horns especially when the head moves to swish a fly!

Use a 5-6 lb BEEF roast, MOO!  I usually make my own mushroom soup but if you don’t then use 2 cans of condensed cream of mushroom soup, one package dry beef onion soup mix, and 1.5 cups of beef stock. Mix these ingredients in your crock pot. Place the 5-6 lb BEEF roast on a deep pan. Coat that raw hunk with garlic, pepper and a some rosemary. Press the spices into the meat. This will require gloves for me. I do not enjoy touching raw meat or rubbing spices on raw meat with my bare hands! EWW! The meat will taste better if you rub the spices into the nooks and crannies of your meat. Place the seasoned meat  in the soup mixture.


Put the lid on and turn to high for 3-4 hours.


After some hours, turn the dial to low for 2-3 hours. Yes, you can keep it on low for 8-9 hours. There will be plenty of gravy. Yes, please add your diced potatoes, carrots, celery, or whatever else you want to use in the after you place the seasoned roast in the pot. The roast wants to be covered by the prepared soup mixture and does not want to rest on a bed of veggies.

The bone fell right out of the soft tender juicy roast as I was moving it to a serving bowl. Your roast will cook down so please notice the size difference from the raw hunk to the just perfect roast.

If you want to be a little health friend, after you cook the roast. When the roast is cool in the pot, refrigerate it. The next evening you can skim off the layer of beef fat and reheat in the oven. I realize that this will change your dinner plans for that night but just a health thought. I didn’t do that but I will eat less calories today for dinner than last night. I believe in moderation. A little here, a little more exercise and water then a little less there!


Isn’t that just delish?! I used no vegetables in the crock pot and added a baked sweet potato and lovey green salad with all the toppings! MMmmmm!!
